New Braunfels, Texas

We bake the way time taught us to —
slowly, with intention, and with ingredients that refuse to be ignored.

A handcrafted bakery and curated grocery destination on the edge of the Comal River valley, where sourdough ferments for 48 hours and every shelf is chosen the way a good friend would choose it — carefully, with care.

Our Story

Rooted in the land,
shaped by patience.

Stahlmans at Bear Creek began with a simple conviction: that the best food doesn't need to rush. Nestled along FM-2722 in New Braunfels, our bakery and pantry draw on generations of Central Texas farming wisdom and European baking tradition to create something quietly exceptional.

Every loaf of sourdough is leavened from a starter we've tended for years. Every pastry is folded by hand before dawn. And every item on our grocery shelves — from local honey to imported olive oils — has passed a standard we'd be proud to serve our own table.

We're not a chain. We're not fast. We're the kind of place your neighbors recommend and then keep to themselves, because they hate sharing.

What We Make & Sell

Our Offerings

From the oven to the shelf — everything here has a story and a standard.

01

Artisan Breads

Sourdough, ciabatta, focaccia, and seasonal specialties — all leavened naturally, baked in small batches, and finished with a crust that speaks for itself.

02

Pastries & Viennoiserie

Croissants, danishes, and daily specials — made from scratch before sunrise, using French technique and the best butter you'll ever taste.

03

Curated Grocery

Local honey, small-batch preserves, imported oils, specialty flours, and pantry staples — each item selected for quality you can trust.

04

Custom Orders

Celebration cakes, event catering, and special dietary requests — we take time with every commission because it matters to the person receiving it.

The Craft

Good food is an act of
patience and respect

We don't cut corners because corners are where quality goes to die. Our sourdough ferments for 48 hours minimum. Our butter is French. Our flour is stone-milled. We source from Texas farms when we can and from trusted importers when we must. And we taste everything before it reaches the display case.

This is a place built for people who notice the difference — the crunch of a properly baked crust, the depth of a well-kept starter, the quiet satisfaction of knowing exactly where your food came from.
